Caramelized Four Cheese GF Gnocchi with Broccoli and Cauliflower

I was very happy to find gluten free gnocchi at my neighborhood grocery store. Gnocchi is one of my favorite pastas and I haven't had luck making it gluten free at home but I am going to keep trying! This dish is indulgent and kind of mind-blowingly good. The cheeses I use can be substituted but I recommend using at least one blue and one sharp cheese like a nice aged, white cheddar.

Caramelised Four Cheese (gluten free) Gnocchi with Broccoli and Cauliflower
Serves 6 as side 4 as a main

 

 

 

 

 

 

Ingredients

3 tbsp. olive oil
Salt and freshly ground white pepper
1 yellow onion, small diced
2 cloves garlic, minced
1 cup dry white wine
2 sprigs thyme, left intact
2 sprigs rosemary, left intact
3 tbsp gluten free flour
1/2 pint cream, 1/2 pint water
1/2 cup of each: smoked mozzarella, gorgonzola, herbed asiago, roughly chopped
1 cup aged white cheddar, roughly chopped
1 lb. gluten free gnocchi, cooked and set aside, covered
3/4 cup chopped broccoli
3/4 cup chopped cauliflower

Method

Preheat oven to broil at 400°.

In a large, heavy bottom pot, heat the olive oil over medium high heat. Add the onions and garlic and sauté, stirring only very occasionally to allow them to brown a bit. Add the wine and the herbs and stir. Allow the alcohol to cook off and the wine to reduce by half, stirring frequently. Remove the herbs and discard.

Slowly add the gluten free flour and stir constantly until well incorporated and there are no lumps. Allow to cook, stirring constantly for about 5 minutes. Add the cream slowly and stir until smooth. Add the water in the same manner. Lower the heat to medium low and allow to simmer. Add the cheeses and stir until they have all melted into the sauce.

Occasionally return to the pot to stir and scrape the bottom of the pan to remove the caramelized bits from the bottom. This adds a delicious element to the dish so don't skip this step! 

When the sauce becomes thick, add the vegetables and stir. Allow to cook for 10 minutes, stirring occasionally. Add the cooked gnocchi and stir. 

Transfer to a baking pan or ramekins and bake under the broiler until browning and bubbly. Serve immediately!
