Black Bean Soup

Serves 2 as a main
Ingredients
2 tbsp olive oil
3 bulbs green garlic, minced
1 clove garlic, minced
1/4 yellow onion
1/2 bunch swiss chard, finely chopped
1 tsp garlic powder
1 tsp cumin
1/4 tsp oregano
1/4 tsp smoked paprika
2 cups chicken or vegetable stock
15 oz can black beans
2 tbsp yogurt to serve
Method
In a medium pot, heat oil over medium-high heat. Add garlic and heat until just beginning to brown. Add swiss chard and stir until well coated with oil. Add spices and stir until garlic and onions are well coated and the spices are fragrant.
Add stock and bring to a boil. Add black beans and bring back to a boil. Reduce to a simmer and cook for 20 minutes.
Garnish with yogurt, chopped scapes, avocado and marinated eggplant.
